Wordless Wednesday: Conquerer of Crust

Quiche

My friends, I am so excited. For this week, I conquered pastry crust!

Up until now my crusts have always been kind of bland and chewy. But just last week I made a quiche (carmelized onion quiche from Vegan Brunch) for breakfast with friends and I used vegan Earth Balance shortening instead of margarine for the pastry. Low and behold, a crust of excellence. And then, even more amazingly, I baked my first truly successful apple pie on Monday. Flakey crust! Tender fruit! Perfect balance of sweetness! I am very proud of myself.

Shortening makes a huge difference with pastry! Though it's still intimidating to make. Everything needs to be cold and done just so, or else your pastry gets all sad and lifeless. So I generally shy away from pastry-making, despite how wonderful pies are. Oh, pies.

P.S. What recipe did you use for the apple pie? One day I might conquer my pastry phobia :)

Bangin! A good crust recipe is a great thing to have. It helps to keep the ingredients cold too. I think the apple pie photo looks good!

I love Vegan Brunch! I've been meaning to try that caramelized quiche but was also afraid of trying to make pastry. It looks awesome and bet tasted even better!

Woo! Congrats! I remember the first time I conquered pie crust as well. It really is no small matter because everything has to be just so.
