Vegan Mofo Comfort Food: Seitan "Wings" and Potato Salad
This is a dinner of comforting flavours all born of other people's recipes. Because really, Mofo or nofo, I am a working woman and not able to create 30 original recipes in 30 days. Though I suppose I could quit my job and spend all day cooking, which sounds wonderful. Except my husband says I can't do that unless we suddenly become independently wealthy.
The star of the show as far as this meal was concerned were the Vegan "Wings" from Vegan Dad.
The Man of Science especially enjoyed them, murmuring with delight at several points during the meal. I liked them a lot, too. They were very chewy and salty which generally equals delicious. I think I overdid it a bit with the number I consumed. Does anyone else get a stomach ache from too much seitan? Eeg.
The lemon cumin potato salad on the plate comes via Everybody Likes Sandwiches, which is not a vegan blog, but often features great vegan or veganizable recipes
The soup is a basic squash soup of my own creation and I may do a future post about no-fail vegetable soups, so I'm going to keep the details of that one under my hat for now.
I must leave you now, since I am making tacos and cookies for five people this evening and then going to the library to see my excellent friend Jeff give a talk about his book. But I will leave you with one last comforting, cosy image. It's not food, but it sure makes me feel all happy inside.
