
I'm flirting with the idea of eating one raw dinner per week, so I began with some raw beet ravioli. I like the way raw food makes me feel and it's nice to eat light now and again. This was shockingly easy and really, really tasty! Trouble is, I ate it an hour ago and I'm hungry again. Next time? Raw appetizers and desserts to go along with it.

I have found raw food doesn't keep me full for very long either! I think it's because if you focus on fruits/veggies you don't get as many calories at a meal as you should
Oh, wow, that looks amazing! I have the original recipe in one of my uncook-books, but I've always feared it would be really complicated. Glad to hear it wasn't so bad! Now I'm definitely going to have to try it this month.

These look delicious. I've never consciously eaten raw, but I've heard both that you feel hungrier sooner and also that it fills you up more. Hmmm.... would love to see your raw dinners, even if monthly!
So pretty! I stick with raw breakfast (green smoothie) and that is a great start to my day - but raw dinners are a good idea too. I tried making a raw ravioli a few months ago, but couldn't get the slices thin enough...it was still yummy though.

These were wonderful! I made some last night for a light dinner (with fresh basil instead of the tarragon), and then brought my leftovers to work to wow my co-workers. I would definitely make them again when I want something easy and snacky that looks impressive. Thanks for the inspiration!
